The traditional Martin’s goose meal is bringing an economic boost to Burgenland’s hospitality and food businesses, ORF reports. Although it is traditionally associated with St Martin’s Day on November 11, goose is a focus for restaurants throughout autumn.
Inns and restaurants are now in the peak season for serving the dish, with a range of variations on offer. “Martin’s goose is part of Burgenland’s culinary culture,” said Paul Gregorits, spokesman for the region’s hospitality industry.
Nikolaus Berlakovich, president of the Burgenland Chamber of Agriculture, said the tradition reflected close cooperation between farming and hospitality. Many guests combine a goose meal with an outing or even a spa holiday, according to the article.
Andreas Wirth, president of the Burgenland Chamber of Commerce, called the meal one of the region’s culinary highlights and said it benefited hospitality and accommodation businesses, retailers and regional producers.
